Prepare yourself for another post in our Mission in the Kitchen series....

Today, we will be sharing with you a little project we made in the kitchen--and ate up pretty fast because it is pretty yummy! What are we talking about? Well, GRASSHOPPER PUDDING, of course!

We were really craving some mint ice cream...but we didn't have any... So we got creative! We made a box of vanilla pudding, added a little bit of blue food coloring (because the yellowness of the pudding + the blue = green), and then added a few drops of mint extract. What you're looking at here (isn't it a pretty picture?!) is lower-calorie, fat-free, super easy and yummy alternative to mint ice cream! Seriously, the deliciousness nearly blew us away!

Well, we decided we wanted to be blown away even further, so we added an extra chocolate kick--which I admit might take away a bit from the whole "healthier alternative" thing, depending on how much you add with this--and threw in some Oreo cookies! We just crushed them up, and tossed them in! That made the deliciousness even more delicious!
